I adore stuffing but my Hunnyman is not a huge fan. So when Thanksgiving rolls around and I make a casserole of it, I either hurt myself trying to eat it all before it goes bad or I very tired of it by the time the last bite is eaten. I enjoy it so much that I wanted to find a way to have it year round. I finally worked it out. Yup, stuffing isn't just for Thanksgiving any more. I designed the recipe, which makes 18 muffins, so that I could have a couple of servings to enjoy fresh and then the rest easily freezes and then can be quickly thawed and reheated for single serving usage... they are awesome in lunches too! The muffins have wonderful, crunchy tops and yet remain very moist. I'd be glad to share the recipe with anyone who'd like it.
